A flavorful and easy-to-make taco rice bowl combining seasoned beef, fresh toppings, and fluffy rice for a satisfying meal.
Ingredients

olive oil

packet or 2 tablespoons
taco seasoning mix

tomato sauce or salsa

cooked white or brown rice

corn kernels, fresh, canned, or frozen

black beans, rinsed and drained

shredded cheddar or Mexican blend cheese

cherry tomatoes, halved

Instructions
Cook the rice according to package instructions, then keep warm.
In a large skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
Add ground beef to the skillet, cook for 5-7 minutes until browned, then drain excess fat. Season with salt and pepper.
Sprinkle taco seasoning over beef, stir to coat, then pour in tomato sauce. Simmer for 5 minutes until thickened.
While beef simmers, warm corn and black beans. Prepare toppings: slice avocado, halve cherry tomatoes, chop cilantro.
Assemble bowls with rice, beef mixture, and toppings. Garnish with cheese, cilantro, and lime wedges. Serve immediately.
Notes
For extra flavor, add hot sauce or salsa to taste.
