A flavorful and easy-to-make taco rice bowl combining seasoned beef, fresh toppings, and fluffy rice for a satisfying meal.

Ingredients

Meat and Rice

  • 1 lb ground beef 85% lean (preferably)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet or 2 tablespoons taco seasoning mix
  • 0.5 cup tomato sauce or salsa
  • 3 cups cooked white or brown rice
  • 1 cup corn kernels, fresh, canned, or frozen
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced
  • 0.25 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions 

  • Cook the rice according to package instructions, then keep warm.
  • In a large skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
  • Add ground beef to the skillet, cook for 5-7 minutes until browned, then drain excess fat. Season with salt and pepper.
  • Sprinkle taco seasoning over beef, stir to coat, then pour in tomato sauce. Simmer for 5 minutes until thickened.
  • While beef simmers, warm corn and black beans. Prepare toppings: slice avocado, halve cherry tomatoes, chop cilantro.
  • Assemble bowls with rice, beef mixture, and toppings. Garnish with cheese, cilantro, and lime wedges. Serve immediately.

Notes

For extra flavor, add hot sauce or salsa to taste.
