A flavorful and colorful bowl combining tender chicken, sweet pineapple, and vibrant vegetables over rice, all coated in a savory sauce.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup canned pineapple chunks (drained, juice reserved)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 0.25 teaspoon ground ginger
  • 2 cups cooked jasmine or brown rice
  • 0.5 cup red bell pepper (diced)
  • 0.25 cup green onion (sliced)
  • 1 tablespoon sesame seeds (optional, for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 6-7 minutes. Remove and set aside.
  • Add a splash of pineapple juice to the same skillet. Toss in pineapple chunks and red bell pepper; sauté for 3-4 minutes until caramelized and softened.
  • Whisk soy sauce, honey, garlic, ginger, remaining pineapple juice, and cornstarch in a small bowl. Pour into skillet; stir until thickened, about 2-3 minutes.
  • Return chicken to skillet; stir to coat with sauce. Simmer for 1-2 minutes to combine flavors.
  • Serve rice in bowls topped with chicken mixture. Garnish with green onions and sesame seeds if desired.

Notes

For extra flavor, consider adding a drizzle of sesame oil or chopped cilantro.
