Ingredients

Meat

  • 1 lb lean ground beef (Choose 90% lean for flavor with less fat)
  • 2 cloves garlic (Minced)
  • 1 medium onion (Finely chopped)
  • 2 tbsp soy sauce (Adds umami and saltiness)
  • 1 tsp ground cumin (Earthy flavor)
  • 1 tsp black pepper (Freshly cracked)

Grains & Broth

  • 1 cup quinoa (Rinse thoroughly)
  • 2 cups vegetable broth (Infuse quinoa)
  • 1 tsp salt (To taste)

Vegetables & Greens

  • 1 cup cherry tomatoes (Halved)
  • 1 medium cucumber (Diced)
  • 1 cup bell peppers (Mixed colors)
  • 2 cups baby spinach (Fresh leaves)
  • 1 medium carrot (Grated or sliced)

Dressing & Oil

  • 3 tbsp olive oil (Extra virgin)
  • 2 tbsp lemon juice (Brightens the bowl)
  • 1 tbsp honey (Balances acidity)
  • 1 tsp salt (Adjust to taste)
  • 1 tsp pepper (Adjust to taste)

Instructions 

  • Cook quinoa in vegetable broth with salt until fluffy, about 15 minutes.
  • Meanwhile, sauté ground beef with garlic, onion, cumin, pepper, and soy sauce until browned.
  • Prepare vegetables: halve cherry tomatoes, dice cucumber, slice bell peppers, grate carrot.
  • Mix cooked quinoa, beef, and vegetables in a large bowl. Whisk together olive oil, lemon juice, honey, salt, and pepper for dressing.
  • Drizzle dressing over the bowl, toss gently, and serve.

Notes

For extra flavor, add fresh herbs like cilantro or parsley before serving.
