  • 0.25 cup dried cranberries (optional)
  • 0.25 cup red onion (finely diced) (optional)
  • 0.5 cup Greek yogurt (or mayo for creamier texture)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice (prevents apples from browning)

Instructions 

  • Mix chicken, apple, celery, walnuts, cranberries, and red onion in a bowl.
  • In a separate small bowl, whisk together Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper.
  • Combine the dressing with the chicken mixture and stir well.
  • Spoon the mixture onto tortillas, add lettuce leaves, and roll up.
  • Serve immediately or refrigerate for later.

Notes

For a lower-calorie option, use Greek yogurt and whole wheat tortillas.
