Ingredients

Wet ingredients

  • 2 pieces ripe medium bananas
  • 2 pieces pasture-raised eggs
  • 0.5 cup creamy unsalted peanut butter
  • 2 teaspoons vanilla extract
  • 0.33-0.5 cup pure maple syrup (see notes)
  • 3/4 cup unsweetened almond milk

Dry ingredients

  • 2 cups rolled oats
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 0.5 cup dairy-free dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Grease a muffin tin.
  • Blend bananas, eggs, peanut butter, vanilla, syrup, and almond milk until smooth.
  • Stir in oats, cocoa, baking soda, and salt. Gently fold in chocolate chips.
  • Divide batter into muffin cups, top with extra chocolate chips, and bake for 20 minutes.
  • Cool for 10-15 minutes before serving. Store leftovers in an airtight container.

Notes

For a sweeter taste, adjust maple syrup to your preference.
