1 ½cupswhite whole wheat flour or gluten-free flour
1 ½tspbaking powder
¼tspsalt
1tbsporange zest(about 1 large orange)
2tbspunsalted butter, cold and cubed
½cupplain nonfat Greek yogurt
3tbsphoney
3tbspfreshly squeezed orange juice
1tspvanilla extract
¾cupfresh cranberries, diced
2tspnonfat milk
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment or a silicone mat.
Mix flour, baking powder, salt, and orange zest. Cut in butter until crumbly. Add yogurt, honey, orange juice, and vanilla; stir just until combined. Fold in cranberries.
Shape dough into a ¾-inch thick circle on the baking sheet. Brush with milk and cut into 8 wedges, but do not separate.
Bake for 18-21 minutes until golden. Cool for 5 minutes before serving.
Notes
For a dairy-free version, substitute Greek yogurt with plant-based yogurt.
