Heat olive oil in a large skillet over medium heat. Add cubed chicken, paprika, and Italian seasoning; cook until chicken is browned and cooked through.
Add minced garlic and cook for 1 minute until fragrant. Stir in flour, then gradually add chicken broth and milk, stirring until sauce thickens.
Stir in Greek yogurt and Parmesan cheese until smooth. Add cooked pasta and spinach; cook until spinach wilts. Season with salt and pepper.
Garnish with chopped parsley before serving.
