Ingredients

Pasta

  • 8 oz whole wheat penne or fettuccine
  • 2 tbsp olive oil
  • 3 cloves garlic, minced

Chicken

  • 1 lb boneless skinless chicken breasts, cubed
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning

Sauce ingredients

  • 1 tbsp whole wheat flour
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-fat milk (1% or 2%)
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup plain non-fat Greek yogurt

Cheese

  • 1/2 cup plain grated Parmesan cheese

Vegetables

  • 2 cups baby spinach (optional but recommended)

Seasonings

Garnish

Instructions 

  • Cook pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add cubed chicken, paprika, and Italian seasoning; cook until chicken is browned and cooked through.
  • Add minced garlic and cook for 1 minute until fragrant. Stir in flour, then gradually add chicken broth and milk, stirring until sauce thickens.
  • Stir in Greek yogurt and Parmesan cheese until smooth. Add cooked pasta and spinach; cook until spinach wilts. Season with salt and pepper.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, add a squeeze of lemon or red pepper flakes.
