Ingredients

Wet Ingredients

  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 1 cup plain greek yogurt (nonfat or full-fat)
  • 2 large eggs
  • 1/2 cup honey or pure maple syrup
  • 1/4 cup coconut oil or vegetable oil (melted)
  • 1 tsp pure vanilla extract

Dry Ingredients

  • 1 3/4 cups whole wheat flour (or all-purpose)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix wet ingredients until smooth.
  • Whisk dry ingredients and fold into wet mixture.
  • Fill muffin cups and bake for 18–22 minutes.
  • Cool for 5 minutes, then transfer to a wire rack.

Notes
