A vibrant and nutritious salad combining tender lentils with fresh vegetables and a zesty lemon dressing, perfect for a healthy meal.

Ingredients

Lentils

  • 1 cup green or brown lentils (rinsed)
  • 2 cups water or vegetable broth

Vegetables and herbs

  • 1 small red onion (finely chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 piece cucumber (diced)
  • 0.25 cup parsley (chopped)
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice

Seasoning

Instructions 

  • Cook lentils in water or broth until tender, then drain.
  • Combine cooked lentils with chopped onion, cherry tomatoes, cucumber, and parsley in a bowl.
  • Whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  • Pour dressing over the salad and toss gently.
  • Serve immediately or refrigerate for later.

Notes

For extra flavor, add a pinch of cumin or sumac.
