Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
In a bowl, combine dry ingredients: almond flour, protein powder, poppy seeds, baking powder, and salt.
In another bowl, whisk eggs, almond milk, lemon juice, lemon zest, honey, vanilla, and melted coconut oil.
Mix wet ingredients into dry until just combined. Divide batter among muffin cups.
Bake for 20 minutes or until a toothpick inserted comes out clean. Let cool and optionally drizzle with lemon glaze.
