Start your day with these wholesome, easy-to-make oatmeal chocolate chip muffins, perfect for a quick and nutritious breakfast.

Ingredients

Dry ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon ground cinnamon (optional)
  • 0.25 teaspoon salt

Wet ingredients

  • 1 cup milk (any kind)
  • 0.33 cup melted unsalted butter or vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions 

  • Preheat oven to 400°F (200°C). Line a 12-cup muffin tin or grease cups.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl.
  • Combine wet and dry ingredients until just mixed. Fold in chocolate chips.
  • Divide batter evenly into muffin cups. Optional: add extra chocolate chips on top.
  • Bake at 400°F (200°C) for 5 minutes, then reduce temperature to 375°F (190°C) and bake for 18-22 minutes. Cool before serving.

Notes

For a healthier option, use whole wheat flour and dark chocolate chips.
