Ingredients
Dry ingredients

white whole wheat flour or gluten-free flour

Wet ingredients

unsalted butter or coconut oil, melted and cooled slightly

egg whites
(room temperature)

almond extract

liquid stevia
(or adjusted to taste)

plain nonfat Greek yogurt

distilled plain white vinegar

nonfat milk

diced peaches
Instructions
Preheat oven to 350°F (175°C). Line mini muffin cups and spray with nonstick spray.
Mix dry ingredients in a bowl. Whisk wet ingredients separately, then combine with yogurt and vinegar.
Alternate adding dry mixture and milk to the wet, stirring just until combined. Fold in peaches.
Divide batter evenly into muffin cups. Bake for 14-16 minutes until tops are firm and a toothpick comes out clean.
Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use ripe peaches and avoid overmixing the batter.
