Enjoy these moist and flavorful mini muffins packed with peaches and warm spices, perfect for a healthy snack or breakfast.

Ingredients

Dry ingredients

  • 2 cups white whole wheat flour or gluten-free flour
  • 1 ¾ tsp ground cinnamon
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt

Wet ingredients

  • ½ tbsp unsalted butter or coconut oil, melted and cooled slightly
  • 2 large egg whites (room temperature)
  • 2 tsp almond extract
  • 2 tsp liquid stevia (or adjusted to taste)
  • ½ cup plain nonfat Greek yogurt
  • 2 tbsp distilled plain white vinegar
  • ¾ cup nonfat milk
  • 1 cup diced peaches

Instructions 

  • Preheat oven to 350°F (175°C). Line mini muffin cups and spray with nonstick spray.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately, then combine with yogurt and vinegar.
  • Alternate adding dry mixture and milk to the wet, stirring just until combined. Fold in peaches.
  • Divide batter evenly into muffin cups. Bake for 14-16 minutes until tops are firm and a toothpick comes out clean.
  • Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use ripe peaches and avoid overmixing the batter.
