These wholesome cookies combine oats, peanut butter, and flaxseed for a nutritious treat that’s easy to make and perfect for a quick snack.

Ingredients

Dry ingredients

  • 1 cup gluten free rolled oats
  • ¼ cup gluten free oat flour
  • 2 tablespoons golden ground flaxseed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet ingredients

  • 2 tablespoons coconut oil (melted)
  • 6 tablespoons smooth peanut butter
  • 3 tablespoons pure maple syrup
  • 3 tablespoons coconut sugar
  • 1 teaspoon pure vanilla extract
  • ½ cup peanuts (finely chopped)

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix dry ingredients: oats, oat flour, flaxseed, cinnamon, and salt.
  • Whisk wet ingredients: coconut oil, peanut butter, maple syrup, coconut sugar, and vanilla.
  • Combine wet and dry mixtures, fold in peanuts, then scoop onto baking sheet and flatten.
  • Bake for 12-15 minutes, cool on rack before serving.

Notes

For best results, store in an airtight container for up to 3 days.
