These wholesome cookies combine oats, peanut butter, and flaxseed for a nutritious treat that’s easy to make and perfect for a quick snack.
Ingredients
Dry ingredients

Wet ingredients

Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dry ingredients: oats, oat flour, flaxseed, cinnamon, and salt.
Whisk wet ingredients: coconut oil, peanut butter, maple syrup, coconut sugar, and vanilla.
Combine wet and dry mixtures, fold in peanuts, then scoop onto baking sheet and flatten.
Bake for 12-15 minutes, cool on rack before serving.
