Ingredients

For the wet ingredients

  • 0.33 cup butter
  • 1 can (15 oz) pumpkin puree
  • 0.5 cup pure maple syrup
  • 2 eggs eggs
  • 1 teaspoon vanilla extract

For the dry ingredients

  • 1.75 cups whole wheat pastry flour ((or white whole wheat flour))
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1.5 teaspoons cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon allspice

For the glaze

  • 0.5 cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 1 tablespoon unsweetened almond milk ((or any milk, if necessary to thin glaze))

Instructions 

  • Preheat oven to 350°F, line a loaf pan with parchment, and spray with nonstick spray.
  • Cook butter over medium heat until browned and nutty, then cool for 5-10 minutes.
  • Whisk pumpkin, maple syrup, eggs, vanilla, and browned butter until smooth.
  • Mix dry ingredients, then combine with wet ingredients. Pour into pan and bake for 50-65 minutes. Cool completely.
  • Mix powdered sugar, maple syrup, and almond milk to make glaze. Pour over cooled bread and serve.

Notes

Ensure bread is fully cooled before applying glaze for best results.
