Enjoy these soft and chewy pumpkin oatmeal bars, perfect for a nutritious snack or breakfast. Made with wholesome ingredients and a hint of pumpkin spice.

Ingredients

Dry ingredients

  • 1 cup instant oats
  • ¾ cup whole wheat flour or gluten-free flour
  • 2 ¼ tsp homemade pumpkin pie spice
  • 1 tsp baking powder
  • ¼ tsp salt

Wet ingredients

  • 1 tbsp vegan butter or coconut oil, melted and cooled slightly
  • ¾ cup pumpkin purée (room temperature)
  • 1 tsp vanilla extract
  • ¼ cup pure maple syrup
  • ¼ cup unsweetened vanilla almond milk (room temperature)

Instructions 

  • Preheat oven to 300°F (150°C) and spray an 8-inch square pan with nonstick spray.
  • Mix dry ingredients in a bowl; combine wet ingredients in another, then stir together.
  • Spread batter into prepared pan and bake for 10-14 minutes. Cool completely and let rest for 6+ hours before slicing.

Notes

For best texture, let the bars rest at room temperature for at least 6 hours before slicing.
