These nutritious pumpkin protein balls are easy to make and perfect for a quick snack or energy boost, featuring warm spices, protein, and crunchy pecans.

Ingredients

Dried ingredients

  • 0.5 cup pumpkin purée
  • 0.5 cup nut butter (almond, cashew, or peanut)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 0.33 cup vanilla protein powder ((plant-based or whey))
  • 1 tablespoon chia seeds or ground flaxseed
  • 1.5 teaspoons pumpkin pie spice
  • 0.25 teaspoon cinnamon
  • Pinch sea salt
  • 0.25 cup chopped toasted pecans
  • to taste milk of choice (for moisture)
  • 2 tablespoons mini dark chocolate chips or dried cranberries (optional)

Instructions 

  • Mix all ingredients until well combined. Fold in pecans and add-ins.
  • If too soft, refrigerate 10–15 minutes; if too dry, add milk until moldable.
  • Scoop and roll into 1½-inch balls, then chill for 15 minutes to set.

Notes

Refrigerate in an airtight container for up to 1 week or freeze for longer storage.
