A delicious and easy sheet pan meal combining sausages, apples, and fall vegetables for a wholesome dinner.

Ingredients

Vegetables

  • 1 pound Brussels sprouts (trimmed and halved)
  • 1 medium red onion (cut into ¼-inch-thick slices)

Garlic and Dressing

  • 4 cloves garlic (minced)
  • 3 tablespoons Dijon mustard (plus more for serving)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon ground black pepper

Fruit

  • 1 medium sweet-crisp apple (peeled, cored, diced into 1-inch cubes)
  • 12 ounces precooked apple chicken or turkey sausages (sliced into ½-inch-thick coins)

Herbs

  • 1 tablespoon chopped fresh thyme

Instructions 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment or foil.
  • Arrange Brussels sprouts and red onion on the sheet. Whisk garlic, mustard, oil, honey, vinegar, salt, and pepper; drizzle over veggies and toss to coat.
  • Bake for 10 minutes, then add apple and sausage, toss, and return to oven.
  • Roast for another 15-20 minutes until vegetables are golden and sausages browned. Garnish with thyme and serve.

Notes

For easier cleanup, line your baking sheet with parchment or foil.
