Ingredients

Protein

  • 2 cups cooked, shredded chicken (grilled or poached) (Use rotisserie chicken for quicker prep)
  • 1 cup fresh or grilled corn kernels (Can substitute with frozen corn)
  • 0.5 cup diced red bell pepper
  • 0.5 cup chopped green onions
  • 0.25 cup chopped fresh cilantro
  • 1 whole avocado, diced (Add just before serving to prevent browning)
  • 2 tablespoons juice from limes
  • 0.25 cup Greek yogurt (Can use mayo for creaminess)
  • 1 teaspoon chili powder (Adjust to taste)

Instructions 

  • Combine shredded chicken, corn, bell pepper, green onions, and cilantro in a large bowl.
  • In a small bowl, mix lime juice, Greek yogurt, chili powder, salt, and pepper.
  • Pour the dressing over the chicken mixture and toss to combine.
  • Add diced avocado just before serving and gently fold in.

Notes

For extra flavor, sprinkle with additional cilantro or chili flakes before serving.
