Ingredients

  • 1 whole chicken (whole chicken)
  • 8 cups chicken broth
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 cloves garlic (minced)
  • 2 cups carrots
  • 2 cups celery
  • 2 cups potatoes
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme (dried)
  • 2 leaves bay leaves
  • 1 tablespoon parsley (chopped, fresh)
  • 1 cup peas (frozen)
  • 1 cup corn kernels (frozen)

Instructions 

  • Chop carrots, celery, and onion; mince garlic; cube chicken.
  • Heat olive oil; cook vegetables until softened, then add garlic and chicken; cook until no longer pink.
  • Pour in chicken broth; bring to boil, then simmer for 20 minutes.
  • Add salt, pepper, thyme, peas, and corn; cook for 5 minutes.
  • Ladle into bowls and garnish with parsley.

Notes

For extra flavor, add a squeeze of lemon or fresh herbs before serving.
