Ingredients

Vegetables

  • 1 tbsp olive oil
  • 1 large onion, finely diced
  • 4 sticks celery, finely diced
  • 3 carrots carrots, peeled and cubed
  • 1 large potato, peeled and cubed
  • 1 cup cubed butternut squash
  • 1 tsp salt
  • 1 tsp dried thyme or Italian seasoning
  • 6 cups hot chicken broth
  • 2 lbs chicken tenders
  • 3-4 tbsp tomato paste
  • 1 zucchini zucchini, cubed
  • 1/2 cup sweet corn, drained
  • 1/2 cup fregola or risoni pasta
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • to taste Salt and pepper
  • for garnish Grated Parmesan cheese (optional)

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, celery, carrots, potato, and butternut squash. Sauté 5 minutes with salt and seasoning.
  • Pour in chicken broth, add chicken tenders and tomato paste. Simmer 15 minutes.
  • Add zucchini, corn, pasta, and lemon juice. Cook 10-13 minutes until pasta is tender.
  • Remove chicken, shred with forks, return to soup, stir in parsley, season to taste, and serve hot.
