Instructions
Heat oil in a large pot, season chicken, and brown for 5-7 minutes per side. Remove and set aside.
Sauté onions, garlic, carrots, and celery for 5-7 minutes. Add tomato paste and cook 2 minutes.
Add broth, scrape up browned bits, return chicken, add potatoes, thyme, and bay leaf. Simmer for 30-35 minutes.
Add green beans in the last 10 minutes. Discard bay leaf, adjust seasoning, and serve garnished with parsley.
Notes
For extra flavor, use homemade chicken broth and fresh herbs.
