A comforting and flavorful one-pot chicken stew perfect for a hearty meal. Loaded with vegetables and herbs, it’s easy to prepare and satisfying.

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 4 bone-in, skin-on chicken thighs chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced garlic cloves
  • 3 carrots, sliced carrots
  • 2 celery stalks, chopped celery stalks
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 1 cup potatoes, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • 1 cup green beans, trimmed and cut

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions 

  • Heat oil in a large pot, season chicken, and brown for 5-7 minutes per side. Remove and set aside.
  • Sauté onions, garlic, carrots, and celery for 5-7 minutes. Add tomato paste and cook 2 minutes.
  • Add broth, scrape up browned bits, return chicken, add potatoes, thyme, and bay leaf. Simmer for 30-35 minutes.
  • Add green beans in the last 10 minutes. Discard bay leaf, adjust seasoning, and serve garnished with parsley.

Notes

For extra flavor, use homemade chicken broth and fresh herbs.
