Instructions
Cook lentils until tender but still hold shape, then drain and set aside.
Toss vegetables with olive oil, salt, black pepper, garlic powder, and smoked paprika. Roast at 400°F (200°C) for 20-25 minutes until tender and slightly caramelized.
Combine cooked lentils and roasted vegetables in a large bowl.
Stir in chopped parsley, crumbled feta, and lemon juice. Mix well.
Serve warm or chilled, garnished with extra parsley if desired.
Notes
For added flavor, sprinkle with additional herbs or a drizzle of olive oil before serving.
