Mixed Vegetables

  • 4 cups Mixed Vegetables (e.g., bell peppers, zucchini, sweet potatoes)

Fresh Parsley

  • 1/4 cup Fresh Parsley (chopped)

Feta Cheese

Lemon Juice

Instructions 

  • Cook lentils until tender but still hold shape, then drain and set aside.
  • Toss vegetables with olive oil, salt, black pepper, garlic powder, and smoked paprika. Roast at 400°F (200°C) for 20-25 minutes until tender and slightly caramelized.
  • Combine cooked lentils and roasted vegetables in a large bowl.
  • Stir in chopped parsley, crumbled feta, and lemon juice. Mix well.
  • Serve warm or chilled, garnished with extra parsley if desired.

Notes

For added flavor, sprinkle with additional herbs or a drizzle of olive oil before serving.
