A vibrant and fresh summer salad combining sweet peaches, heirloom tomatoes, creamy burrata, and fragrant basil, drizzled with olive oil and balsamic vinegar.

Ingredients

  • 2 lbs mixed heirloom tomatoes (sliced ¼ inch thick)
  • 2 balls burrata (8 oz each)
  • 2 ripe peaches peaches (sliced)
  • 1 cup fresh basil leaves
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp aged balsamic vinegar
  • ¼ cup toasted pine nuts
  • flaky sea salt
  • cracked black pepper

Instructions 

  • Arrange tomato and peach slices alternately on a platter.
  • Tear burrata into large pieces and nestle among the fruit.
  • Scatter basil and pine nuts over the top.
  • Drizzle with olive oil and balsamic vinegar.
  • Season with salt and pepper, then serve immediately.

Notes

Use ripe, flavorful peaches for the best taste.
