Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs (about 1.5 pounds)
  • 1/4 cup unsalted butter (melted)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped (or 1 teaspoon dried))
  • 1 tablespoon fresh thyme (chopped (or 1 teaspoon dried))
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 piece lemon (zested and juiced)
  • 2 tablespoons olive oil
  • to taste N/A fresh parsley (chopped (for garnish))

Instructions 

  • Pat chicken thighs dry and season with salt and pepper.
  • Mix melted butter, garlic, herbs, lemon zest, and juice to make herb butter.
  • Heat oil in skillet, sear chicken skin-side down for 5-7 minutes until crispy.
  • Flip chicken, pour herb butter over, and transfer to oven to bake for 25-30 minutes.
  • Rest for 5 minutes, garnish with parsley, and serve.

Notes

Ensure chicken reaches an internal temperature of 165°F for safety.
