Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh rosemary, finely chopped (plus extra for garnish)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon cornstarch (optional) (for thickening)
  • 1 tablespoon water (if using cornstarch)

Instructions 

  • Pat chicken dry, season with salt, pepper, paprika, thyme, and chopped rosemary.
  • Heat olive oil in a skillet, cook chicken 5-6 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, melt butter, sauté garlic for 1 minute, then add chicken broth, scraping browned bits. Stir in cream and mustard, simmer 4-5 minutes.
  • If desired, mix cornstarch with water, stir into sauce, and simmer 1-2 minutes until thickened. Return chicken to skillet, spoon sauce over, and simmer 3-4 minutes. Garnish with parsley and rosemary.

Notes

Ensure not to overcook the chicken for best tenderness.
