Instructions
Combine 1 cup spinach, 2 cups basil, and toasted nuts in a food processor. Pulse until roughly chopped (~10 pulses). Add ¼ cup oil and ¼ teaspoon salt; process until well combined (~30 seconds). Stir in 1 teaspoon lemon zest.
Place 2 cups chicken in a bowl. Mix with 3 tablespoons of pesto to coat evenly. Reserve remaining pesto.
Lay a tortilla on a surface. Spread ½ cup spinach, ½ cup chicken mixture, and ¼ diced avocado in the center. Roll up and cut in half. Repeat with remaining ingredients.
