A delicious and nutritious chicken wrap featuring homemade pesto and fresh ingredients, perfect for a quick lunch or dinner.

Ingredients

Dough and Fillings

  • 3 cups baby spinach (divided)
  • 2 cups fresh basil
  • cup pine nuts or unsalted pistachios (toasted)
  • ¼ cup extra-virgin olive oil
  • ¼ teaspoon salt
  • 1 teaspoon lemon zest
  • 2 cups chopped or pulled cooked chicken
  • 4 8-inch whole-wheat tortillas
  • 1 avocado diced

Instructions 

  • Combine 1 cup spinach, 2 cups basil, and toasted nuts in a food processor. Pulse until roughly chopped (~10 pulses). Add ¼ cup oil and ¼ teaspoon salt; process until well combined (~30 seconds). Stir in 1 teaspoon lemon zest.
  • Place 2 cups chicken in a bowl. Mix with 3 tablespoons of pesto to coat evenly. Reserve remaining pesto.
  • Lay a tortilla on a surface. Spread ½ cup spinach, ½ cup chicken mixture, and ¼ diced avocado in the center. Roll up and cut in half. Repeat with remaining ingredients.

Notes

For extra flavor, toast the nuts until golden before blending.
