These protein-packed biscuits are soft, cheesy, and perfect for a quick breakfast or snack. Made with cottage cheese, almond flour, and cheddar, they are both nutritious and delicious.

Ingredients

Dairy and Eggs

  • 1 cup cottage cheese
  • 2 eggs eggs
  • ¼ cup Greek yogurt

Dry ingredients

  • 1 ¼ cup almond flour
  • ¼ cup whey isolate
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder

Add-ins

  • 1 cup cheddar (shredded)
  • 1 tbsp chopped chives or green onions

Other

  • 2 tbsp olive oil

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly grease.
  • Blend cottage cheese, eggs, and Greek yogurt until smooth. Mix dry ingredients in a bowl.
  • Combine wet and dry mixtures, then fold in cheddar and chives. Scoop 8 portions onto the baking sheet.
  • Bake for 16–20 minutes until golden. Cool slightly before serving.
  • Serve warm. Store leftovers in an airtight container for up to 5 days.

Notes

For extra flavor, brush tops with melted butter before baking.
