Ingredients

  • 1 lb boneless skinless chicken breast (diced into 1/2 inch pieces)
  • 1 tbsp olive oil
  • 1 medium yellow onion (diced)
  • 2 medium carrots (sliced into rounds)
  • 2 stalks celery (sliced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 cup low-fat cottage cheese
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 2 cups fresh baby spinach

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery; sauté 5-7 minutes until softened.
  • Stir in garlic; cook 1 minute until fragrant.
  • Add chicken, salt, pepper, thyme; cook 5 minutes until browned.
  • Pour in broth, bring to boil, then simmer 15 minutes.
  • Blend cottage cheese until smooth, temper with hot soup, then stir into pot.
  • Add spinach; cook 1-2 minutes until wilted, then serve.
