Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery; sauté 5-7 minutes until softened.
Stir in garlic; cook 1 minute until fragrant.
Add chicken, salt, pepper, thyme; cook 5 minutes until browned.
Pour in broth, bring to boil, then simmer 15 minutes.
Blend cottage cheese until smooth, temper with hot soup, then stir into pot.
Add spinach; cook 1-2 minutes until wilted, then serve.
