Ingredients

Dry Ingredients

  • 3/4 cup pumpkin puree
  • 1/2 cup plain greek yogurt
  • 1/2 cup oat flour
  • 1/4 cup vanilla protein powder ((whey or plant-based))
  • 1/4 cup pure maple syrup
  • 2 tbsp unsweetened almond milk
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon sugar ((for topping))

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Sift together dry ingredients in a bowl.
  • Whisk wet ingredients until smooth, adjusting almond milk as needed.
  • Fold dry into wet ingredients gently until just combined.
  • Divide batter into muffin cups and sprinkle with cinnamon sugar.
  • Bake for 20–25 minutes until a toothpick comes out clean.

Notes

For extra moisture, ensure not to overmix the batter.
