Deliciously moist and fluffy pumpkin muffins filled with a creamy cheese center, perfect for a nutritious snack!

Ingredients

Dry Ingredients

  • 125 g almond flour
  • 180 g all-purpose flour
  • 1 tsp cinnamon
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Wet Ingredients

  • 1 tsp vanilla extract
  • 180 ml maple syrup
  • 425 g pumpkin puree ((1 can))
  • 120 g greek yogurt
  • 2 large eggs
  • 80 g cream cheese ((softened))
  • 45 ml maple syrup
  • 15 g all-purpose flour
  • 1 large egg
  • 1.5 tsp vanilla extract
  • 1/4 tsp salt

Instructions 

  • Preheat oven to 350°F and line muffin tin.
  • Mix dry ingredients in a large bowl.
  • Combine wet ingredients and mix into dry until incorporated.
  • Fill muffin tins and prepare cream cheese filling.
  • Pipe filling into muffins and bake for 20 minutes.
  • Cool for 5 minutes before transferring to wire rack.

Notes

For best results, use fresh pumpkin puree.
