A delicious, protein-packed dip perfect for snacking or parties, combining chicken, beans, corn, and cheese with a flavorful taco twist.

Ingredients

Dairy

  • 100 g fat free cottage cheese
  • 0.5 tablespoon lime juice
  • 1 tablespoon taco seasoning

Vegetables

  • 1 tablespoon sweet corn
  • 1 tablespoon black beans

Sauces

  • 2 tablespoons chunky salsa

Herbs

  • 1 tablespoon chopped fresh coriander/cilantro

Protein

  • 70 g chopped cooked chicken
  • 30 g reduced fat mozzarella/cheddar mix, grated

Instructions 

  • Preheat oven to 170°C fan or 375°F.
  • Mix cottage cheese, lime juice, and taco seasoning until smooth.
  • Transfer to an ovenproof dish and stir in corn, beans, salsa, cilantro, and chicken.
  • Sprinkle cheese on top and bake for 15 minutes.
  • Serve warm and enjoy!

Notes

For extra flavor, add a squeeze of lime before serving.
