  • ½ teaspoon Black pepper (Freshly ground for best flavor)
  • 1 teaspoon Fennel (Adds classic sausage aroma)
  • ½ teaspoon Red pepper flakes (Optional for heat)
  • 1 teaspoon Smoked paprika (Adds depth and smokiness)
  • ½ teaspoon Ground nutmeg (Traditional sausage seasoning)
  • 2 cloves Garlic (Minced)
  • 1 teaspoon Apple cider vinegar (For brightness)
  • 2 tablespoons Fresh sage leaves (Chopped finely)
  • 1 tablespoon Fresh thyme (Chopped finely)
  • 1 tablespoon Fresh rosemary (Chopped finely)

Instructions 

  • Combine ground chicken, olive oil, maple syrup, salt, pepper, fennel, red pepper flakes, smoked paprika, and nutmeg in a bowl.
  • Add garlic, vinegar, sage, thyme, rosemary, and parsley; mix gently until just combined.
  • Rest mixture for 15 minutes, then form into 12 patties, about 2 oz each.
  • Heat a skillet with olive oil over medium-high heat; cook patties 4-5 minutes per side until golden and cooked through.
  • Transfer to paper towels to drain; serve warm.
