Enjoy these homemade Fig Newtons with a wholesome twist, featuring a rich fig filling wrapped in tender, spiced dough.

bourbon or other dark alcohol

zest and juice of half a lemon

Instructions
Combine flours, sugar, salt, and baking powder in a food processor. Add butter and pulse until small pieces form.
Add vanilla and about 3/4 of the eggs. Pulse until dough comes together; add more egg if needed.
Shape dough into a rectangle, wrap in plastic, and refrigerate for 30 minutes.
Cook figs with water, bourbon, maple syrup, lemon zest/juice, and spices until liquid is absorbed. Cool and blend into a smooth paste.
Divide dough, roll into rectangles, pipe fig filling, fold, and flatten. Slice into cookies and bake at 175°C for 18-22 minutes.
Notes
Chill the dough well for easier handling and better texture.
