Ingredients

Protein

  • 2 cups cooked chicken breast, cut into bite-sized chunks
  • 1/3 cup honey
  • 1/3 cup smoky BBQ sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/2 cup red bell pepper, diced
  • 1/2 cup celery, thinly sliced
  • 1/4 cup red onion, finely chopped
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons BBQ sauce
  • 2 teaspoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh chives or parsley, chopped

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and cool.
  • Mix chicken with honey, BBQ sauce, olive oil, smoked paprika, salt, and pepper; sauté until glazed and cooled.
  • Whisk together mayonnaise, sour cream, BBQ sauce, Dijon mustard, vinegar, smoked paprika, salt, and pepper to make the dressing.
  • Combine pasta, chicken, vegetables, and dressing; toss gently to coat.
  • Refrigerate for 30 minutes, garnish with herbs, and serve chilled.

Notes

For extra flavor, let the salad sit for at least 30 minutes before serving to meld the flavors.
