Ingredients

Dough

  • 1 cup warm whole milk (warmed to 110-115°F)
  • 1 teaspoon granulated sugar
  • 0.25 ounce active dry yeast (equivalent to 2 ¼ teaspoons)
  • 2 large eggs (at room temperature)
  • 0.25 cup unsalted butter, melted and cooled
  • 0.33 cup honey
  • 1 teaspoon Kosher salt
  • 3.5 cups bread flour (spooned and leveled, add more as needed)

For greasing and brushing

  • olive or vegetable oil (for greasing the bowl)
  • melted butter (for brushing the rolls)
  • 1 cup unsalted butter, softened
  • 0.5 cup honey

Instructions 

  • Activate yeast: Warm milk, add sugar and yeast, let foam for 10 minutes.
  • Add eggs, melted butter, honey, and salt to yeast mixture; mix until combined.
  • Gradually add flour, mixing until dough pulls away from bowl; knead briefly by hand.
  • Let dough rise in oiled bowl, covered, for 1-2 hours until doubled.
  • Punch down dough, divide into 12 pieces, shape into rolls, and place in greased pan; let rise 1 hour.
  • Preheat oven to 350°F, brush rolls with melted butter, bake 15-20 minutes until golden, then brush with honey butter and serve.

Notes

For a warm environment during rising, microwave a cup of water and place the dough inside with the water to help it rise.
