Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed

Sauces and Condiments

  • 0.25 cup honey
  • 0.25 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme

Salt and Pepper

  • Salt and black pepper to taste

Instructions 

  • Whisk honey, soy sauce, garlic, paprika, thyme, salt, and pepper. Marinate chicken for 30 minutes.
  • Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, pepper, and paprika; roast on top rack for 25-30 minutes. Roast green beans on a separate tray for same time.
  • Heat a skillet over medium-high heat. Cook chicken 5-7 minutes per side until golden. Pour marinade over chicken and simmer until sauce thickens and chicken is cooked through.
  • Serve chicken with roasted sweet potatoes and green beans, drizzling with extra sauce.

Notes

Marinate the chicken for at least 30 minutes for best flavor.
