Instructions
Preheat oven to 400°F (200°C). Toss vegetables with olive oil, salt, and pepper; roast for 15-20 minutes.
Season chicken breasts with salt and pepper. Cook in a pan with oil until golden and cooked through.
Mix honey and mustard to make the glaze. Brush over cooked chicken.
Serve chicken with roasted vegetables, garnished with pomegranate seeds and rosemary.
