A delicious and healthy dish featuring tender chicken glazed with honey, served alongside roasted Brussels sprouts and butternut squash.

Ingredients

Vegetables

  • 500 g Brussels Sprouts (trimmed and halved)
  • 1 medium Butternut Squash (peeled and cubed)

Protein

  • 4 pieces Chicken Breast (boneless and skinless)
  • 2 tablespoons Honey
  • 2 tablespoons Mustard

Garnish & Herbs

  • for garnish Pomegranate Seeds (optional)
  • few sprigs Rosemary

Other

  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  • Preheat oven to 400°F (200°C). Toss vegetables with olive oil, salt, and pepper; roast for 15-20 minutes.
  • Season chicken breasts with salt and pepper. Cook in a pan with oil until golden and cooked through.
  • Mix honey and mustard to make the glaze. Brush over cooked chicken.
  • Serve chicken with roasted vegetables, garnished with pomegranate seeds and rosemary.

Ensure chicken is cooked thoroughly and vegetables are tender before serving.
