Instructions
Cut wings at the joint, clean in lemon-vinegar water bath, and dry thoroughly.
Season wings with salt, then toss with oil and seasoning mixture. Marinate for at least 1 hour.
Sprinkle baking powder over wings, toss to coat, then arrange on a rack.
Preheat oven to 200°C (390°F). Bake wings for 20 minutes, flip, then bake another 20 minutes until crispy and internal temp reaches 73°C (165°F).
Notes
For extra crispiness, broil wings for 2-3 minutes at the end of baking.
