Ingredients

Cornflake Crunch

  • 3 cups Cornflakes (Crushed coarsely)
  • 1 cup Grated Parmesan Cheese (Freshly grated for best results)
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 2 large Eggs (Beaten)
  • 1 tablespoon Hot Sauce (Adjust quantity to taste)

Main Ingredient

  • 1 pound Chicken Breast Tenderloins (Or sliced whole breasts)
  • 2 tablespoons Extra Virgin Olive Oil (For drizzling)
  • 1 cup Honey (Raw, unfiltered preferred)
  • 1 tablespoon Hot Sauce
  • 1/2 teaspoon Cayenne Pepper (Reduce for milder honey)
  • 1/2 teaspoon Chipotle Chili Powder (Reduce for milder honey)
  • 1 pinch Sea Salt
  • 1 tablespoon Fresh Herbs (Thyme, cilantro, or parsley)

Instructions 

  • Preheat oven to 400°F (200°C). Coat chicken with hot sauce and seasonings.
  • Dredge chicken in beaten eggs, then coat with crushed cornflakes and Parmesan mixture.
  • Arrange chicken on a baking sheet, drizzle with olive oil, and bake for 20 minutes until golden.
  • Meanwhile, warm honey with hot sauce, cayenne, and chipotle chili powder to make the glaze.
  • Brush the baked chicken with honey glaze, sprinkle with fresh herbs, and serve.

Notes

For extra crunch, double coat the chicken with cornflakes.
