A flavorful and easy Korean beef bowl perfect for meal prep, combining savory beef, rice, and fresh vegetables.

Ingredients

Grains

  • 2 cups brown rice
  • 3.25 cups low sodium chicken broth

Seasonings

  • 0.5 tsp sea salt
  • 1.5 tsp fresh ginger, minced
  • 2 tsp low sodium soy sauce
  • 1 tbsp raw honey
  • 1.5 tbsp coconut sugar
  • 1 tbsp sesame oil
  • 1 tbsp olive oil

Vegetables

  • 5 carrots carrots, cut into matchsticks
  • 1 cucumber cucumber, sliced

Protein

  • 2 lbs lean ground beef

Eggs & Garnishes

  • 3 medium-boiled eggs medium-boiled eggs
  • 4 green onions green onions, thinly sliced

Instructions 

  • Cook the brown rice in chicken broth until tender, about 20 minutes.
  • In a skillet, sauté ground beef with minced garlic, ginger, soy sauce, honey, and sugar until cooked through.
  • Prepare vegetables: matchstick carrots and sliced cucumber.
  • Assemble bowls with rice, beef, vegetables, and halved boiled eggs. Drizzle with sesame oil and garnish with green onions.

Notes

You can prepare the beef and rice ahead of time for quick assembly during the week.
