Instructions
Heat olive oil in a skillet, season chicken, and sauté for 5-7 minutes on each side until golden brown. Remove chicken.
Add onions to the skillet, sauté for 3 minutes, then add garlic and cook for another minute.
Stir in rice, add chicken broth, bring to a boil, reduce heat, return chicken, cover, and simmer for 20 minutes.
Add heavy cream and peas, stir gently, and cook for an additional 5 minutes.
Garnish with fresh parsley and serve.
