Enjoy these healthy, protein-packed apple pie cookies that are easy to make and perfect for a quick snack or dessert.

Ingredients

  • 1 cup applesauce
  • 1 cup oats (old fashioned and gluten free)
  • 1 apple diced apple
  • 1 scoop vanilla protein powder (plant based)
  • 2 Tbsp nuts (chopped)
  • 1 tsp chia seeds
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves (ground)
  • pinch salt

Instructions 

  • Preheat oven to 325°F (160°C).
  • Mix applesauce, oats, apple, vanilla, spices, chia seeds, nuts, and protein powder until combined.
  • Drop tablespoonfuls onto a lined baking sheet and flatten slightly, spacing 2 inches apart.
  • Bake for 20 minutes until golden brown.
