Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tbsp pumpkin pie spice

Wet Ingredients

  • 1.5 cups pumpkin puree
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 1 tsp vanilla extract

Cream Cheese Mixture

  • 8 oz cream cheese, softened
  • 0.25 cup granulated sugar
  • 1 large egg yolk
  • 0.5 tsp vanilla extract

Instructions 

  • Preheat oven to 375°F and line a muffin tin with paper liners.
  • Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
  • Mix pumpkin puree, sugars, eggs, oil, and vanilla in another bowl.
  • Combine wet and dry ingredients until just mixed.
  • Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
  • Fill muffin cups with pumpkin batter, add cream cheese mixture, and swirl.
  • Bake for 20-25 minutes until a toothpick comes out clean.
  • Cool before serving.

Notes

For extra flavor, add nuts or chocolate chips to the batter.
