Instructions
Preheat oven to 375°F and line a muffin tin with paper liners.
Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
Mix pumpkin puree, sugars, eggs, oil, and vanilla in another bowl.
Combine wet and dry ingredients until just mixed.
Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
Fill muffin cups with pumpkin batter, add cream cheese mixture, and swirl.
Bake for 20-25 minutes until a toothpick comes out clean.
Cool before serving.
