Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs
  • 0.5 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated

Grains

  • 2 cups jasmine or basmati rice

Vegetables

  • 2 cups bell peppers sliced
  • 1 cup broccoli florets

Garnishes

  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds optional

Instructions 

  • Cook rice according to package instructions.
  • Cook chicken thighs in a skillet until browned and cooked through, then slice.
  • In a bowl, mix sweet chili sauce, soy sauce, garlic, and ginger.
  • Stir-fry bell peppers and broccoli until tender, then combine with chicken and sauce.
