Ingredients

Meat and Vegetables

  • 1 lb steak (thinly sliced, choose sirloin or flank for tenderness)
  • 1 cup bell peppers (sliced, any variety)
  • 1 medium onion (sliced)
  • 1 cup mushrooms (sliced)
  • 1 cup cottage cheese (fresh, room temperature)
  • 1 cup provolone cheese (shredded, divided)
  • 4 large tortillas (use flour or whole wheat)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Slice steak and vegetables; cook steak until browned, then add vegetables and sauté until tender.
  • Mix cottage cheese with half of the provolone cheese until smooth.
  • Fill tortillas with steak and veggie mixture, roll up, and place seam-side down in a baking dish.
  • Pour cheese sauce over wraps, sprinkle remaining provolone, cover with foil, and bake for 20 minutes. Remove foil and bake 5-10 more minutes.
  • Let cool briefly, then serve hot and enjoy!

Notes

For extra flavor, add your favorite herbs or spices to the cheese mixture.
