  • 0.5 teaspoon Red Pepper Flakes (Optional.)
  • 3 cups Roma or Beefsteak Tomatoes (Use meaty varieties.)
  • 1 cup Fresh Basil (Plus extra for garnish.)
  • 8 ounces Fresh Mozzarella (Or low-moisture mozzarella.)
  • 0.5 cup Balsamic Vinegar (High-quality preferred.)
  • 2 tablespoons Honey or Brown Sugar (To taste.)
  • 0.25 cup Store-Bought Balsamic Glaze (Optional.)
  • 0.5 teaspoon Flaky Sea Salt (For garnishing.)
  • 0.5 teaspoon Freshly Cracked Black Pepper (For garnishing.)
  • 1 tablespoon Extra Virgin Olive Oil (Drizzle after baking.)

Instructions 

  • Preheat oven to 400°F (200°C). Season chicken with herbs, salt, and pepper.
  • Heat olive oil in a skillet and sear chicken until golden, about 3-4 minutes per side.
  • Arrange chicken in a baking dish, top with sliced tomatoes, basil, and mozzarella. Drizzle with balsamic vinegar and honey.
  • Bake for 20-25 minutes until chicken is cooked through and cheese is melted.
  • Garnish with flaky sea salt, cracked black pepper, and extra basil. Drizzle with olive oil and balsamic glaze before serving.

Notes

For extra flavor, marinate the chicken with herbs and garlic for 30 minutes before cooking.
