These savory, protein-packed biscuits are perfect for a quick snack or breakfast, combining spicy jalapeños with cheesy goodness.

Ingredients

Dairy

  • 1/2 cup low-fat cottage cheese
  • 1/2 cup self-rising flour
  • 3 tbsp reduced-fat shredded cheddar cheese, divided
  • 1 tbsp canned diced jalapeño peppers, drained

Optional topping

  • 1 slice sliced jalapeño peppers (for topping)

Instructions 

  • Puree cottage cheese until smooth, then transfer to a bowl.
  • Mix in flour, fold in 2 tbsp cheese and peppers, shape into two biscuits, and top with remaining cheese.
  • Spray air fryer with nonstick spray, place biscuits inside, and spray tops.
  • Cook at 360°F (182°C) for 13-15 minutes until golden brown.

Notes

For extra flavor, add a pinch of garlic powder to the dough.
