Instructions
Cook the farro in vegetable stock until tender, about 25 minutes.
Roast sweet potatoes and broccoli with jerk seasoning and olive oil at 400°F (200°C) for 20-25 minutes.
While vegetables roast, prepare maple herb apples by sautéing sliced apples in maple syrup and herbs until tender.
Mix vegan mayo, almond milk, garlic, parsley, and garlic powder to make a creamy sauce.
Assemble bowls with cooked farro, roasted vegetables, apples, and drizzle with sauce. Season to taste.
Notes
Feel free to customize with your favorite vegetables or adjust seasoning for heat.
