A fresh and vibrant salad combining crisp kale, sweet apples, and crunchy vegetables, dressed with a tangy vinaigrette.

Ingredients

Vegetables and Fruits

  • 2 cups kale (shredded)
  • 1 cup red cabbage (shredded)
  • 1 cup green cabbage (shredded)
  • 2 cups apples (peeled and cut into matchsticks)
  • 1/2 cup carrot (shredded)

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup (or agave or honey)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon salt

Instructions 

  • Add the kale, red cabbage, green cabbage, apples, and carrots to a large bowl.
  • Whisk together olive oil, vinegar, maple syrup, lemon juice, mustard, and salt in a bowl or jar.
  • Pour the dressing over the salad and toss to combine.

Notes

For extra flavor, let the salad sit for 10 minutes before serving.
