A fresh and crunchy kale and apple slaw perfect as a side or topping, packed with vibrant flavors and healthy ingredients.
Ingredients

green cabbage

apple (honeycrisp, granny smith, or gala)

(about 3 tablespoons sliced)
jicama

(thinly sliced for added crunch)

Instructions
Thinly slice the kale and place in a large bowl.
Slice cabbage into thin strips and add to the bowl.
Cut apple into thin strips, slice green onion, and add to the bowl. Mix well.
Whisk dressing ingredients and pour over the slaw. Toss to coat.
Refrigerate or let sit at room temperature for a few minutes before serving. Toss again before serving.
Notes
For extra crunch, add thinly sliced jicama.
