A fresh and crunchy kale and apple slaw perfect as a side or topping, packed with vibrant flavors and healthy ingredients.

Ingredients

Vegetables

  • 1 bunch kale (stems removed)
  • ½ small head green cabbage
  • 1 piece apple (honeycrisp, granny smith, or gala)
  • 1 green onion green onion (about 3 tablespoons sliced)
  • jicama optional jicama (thinly sliced for added crunch)
  • cup apple cider vinegar
  • cup apple cider (or apple juice)
  • 3 tablespoons plain Greek yogurt
  • 1 ½ tablespoons pure maple syrup
  • ½ teaspoon dijon mustard
  • ¼ teaspoon celery seed
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions 

  • Thinly slice the kale and place in a large bowl.
  • Slice cabbage into thin strips and add to the bowl.
  • Cut apple into thin strips, slice green onion, and add to the bowl. Mix well.
  • Whisk dressing ingredients and pour over the slaw. Toss to coat.
  • Refrigerate or let sit at room temperature for a few minutes before serving. Toss again before serving.

Notes

For extra crunch, add thinly sliced jicama.
